Jasmine Mangalaseril, the author of the piece, spoke to a number of bar and bottle shop owners about the growing consumer desire to seek out quality non-alcoholic drinks.
Ian Harvey, who runs a newly opened bottle shop, Neoni, in Waterloo, Onterio, said, "I'm very very fussy about it as a consumer myself because I really enjoy beers and wines and spirit.
"People do want high quality wines and beers and they're looking for spirits they can make into cocktails."
